"This product uses fresh bonito caught on our training vessel, the Aichi Maru, and is manufactured, processed, and sold in cooperation with local companies. Based on the knowledge of food processing, nutrition, and the use of local resources that the students learned in class, they themselves considered the combination of flavors and ease of eating, and devised a recipe that was particular about the exquisite balance with ginger that brings out the umami of the bonito. Because it is made into a jelly, it can be easily enjoyed by simply mixing it with rice, and it is also appealing because it can be eaten chilled for a refreshing taste. This is a unique product that is only available at Mitani Suisan, born from the combined efforts of high school students and the power of the community!" "This is a practical training product developed, manufactured, and sold in collaboration with local companies, utilizing bonito caught by the training vessel Aichi Maru. In class, the idea arose to 'convey the deliciousness of fish in a way that is familiar to younger generations,' leading to the suggestion of combining it with strongly flavored mentaiko (spicy cod roe). Through repeated trials, we meticulously adjusted the spiciness, texture, and the proportions to bring out the richness of the bonito. Its jelly-like consistency allows it to easily blend with rice, making it versatile for use as a filling for rice balls or a topping for cold noodles. Kinuhime Salmon Dip

"This is a locally-based product developed in collaboration with the Aichi Prefecture Freshwater Aquaculture Fisheries Cooperative. To bring out the soft texture and refined flavor of Aichi Prefecture's brand fish, 'Kinuhime Salmon,' students came up with the idea of a dip based on processing techniques they learned in class. We used Taibaku sesame oil from Takemoto Oil Co., Ltd. in Gamagori for flavoring. We also added mandarin orange peel to create a unique taste with a refreshing aroma. Its ease of use, allowing you to enjoy it directly on bread or vegetables, is another feature, and it is a product that proposes a new way to enjoy salmon, unique to Mitani Suisan, by combining it with local ingredients." Aichi Prefectural Mitani Fisheries High School

One of the leading fisheries high schools in the Tokai region. Located in Gamagori City, Aichi Prefecture, it is characterized by its hands-on education that takes advantage of its location facing Mikawa Bay. In addition to being able to study a wide range of fields related to the sea, such as marine science, fisheries, food, and the environment, it offers a rich learning experience unique to a fisheries high school, such as sailing using training vessels and fishing experiences.
